Hot and Sour Prawns with Jambalaya
Fish is one of the oldest dishes in the world and prawn fishes do no less than watering the mouth at that very instant when seen. Procedure:Heat the sunflower oil and butter in a frying pan or wok over high heat. Then add the garlic and chillies and allow them to sizzle for about a minute. After that, add the prawns and stir-fry for about three to four minutes on until the colour turns pink and is cooked through. Stir the lime juice before tasting and then season with salt.Jambalaya:
You can also substitute the bacon with spicy sliced sausage, such as chorizo or can also simply eliminate the bacon to make it a vegetarian dish.Ingredients Required:2 table spoon olive oil1 onion, finely chopped3 rashers shoulder bacon, chopped1 stick celery, finely shopped2 green capsicums, deseeded and finely chopped2 sprigs thyme¼ – ½ teaspoon cayenne pepper (according to taste)1 teaspoon smoked paprika3 cups of vegetable stock400 grams chopped tomatoes1 ¼ cups of long grain rice¼ cup chopper flat-leafed parsleyProcedure:
You have to heat the oil in a relatively large saucepan and maintain the heat over medium and then add the bacon, capsicum, onion, celery, thyme, bay, paprika, and cayenne pepper along with a sprinkle of salt and then fry until the vegetables have softened and the bacon gets cooked. This may take ten to twelve minutes.
After this, add the tomatoes and bring to boil. It has to be boiled for five minutes before adding the stock and boiling again. Stir in the rice and cover it. Once done, the flame has to be adjusted to a very low simmer and then cook it for twenty minutes, stirring occasionally in between.
Finally stir in the base recipe described above and the parsley.This recipe tastes the best when served hot. The base recipes can also be Miso-Braised beef, Mint-Marinated Lamb or Spiced Lentils.
